The Best Organic Flaky Flour Tortillas
Flour Tortillas (Butter + Beef Tallow Version)
Ingredients:
3 cups organic all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
3 tablespoons organic unsalted butter (softened or melted)
1 heaping tablespoon organic beef tallow
1 cup warm water (plus 1–2 tbsp more if needed)
* If you are vegan/vegetarian replace the tallow and butter with coconut oil
Instructions:
In a large bowl, whisk together flour, salt, and baking powder.
In another bowl add the butter and tallow, warm water and heat up in the microwave for 40 seconds and mix with a fork until its all blended
Gradually pour in the warm water, stirring until a soft dough forms. If it feels dry, add a splash more water.
Knead the dough for 3–5 minutes, until smooth and supple.
Cover and let it rest for 30–60 minutes.
Divide into 12 balls, then roll each one out thin.
Cook on a hot dry skillet for 30–45 seconds per side, until golden spots form.
Stack under a clean towel to keep soft and warm.
Freezing/Reheating Instructions:
Assemble the freezer wrapping- 1 large freezer ziplock back, and 12 small squares of wax paper.
Layer the tortillas in between the squares of wax paper and zip shut and freeze
The tortillas get extra flaky when reheated, throw the frozen tortilla right into the pan, heat up to desired warmth and flakiness- and enjoy! I usually heat mine up for 1-2 min per side.
