Honey-Sweetened Pumpkin Muffins
Ingredients:
15 oz pumpkin puree
½ cup salted butter, melted
½ cup honey
2 eggs
1 tsp vanilla extract
1 ¾ cups all-purpose flour
1 tbsp pumpkin pie spice
2 tsp cinnamon
2 tsp baking powder
¼ tsp baking soda (added for honey)
½ tsp sea salt
1 cup mix-ins (optional): chocolate chips, nuts, etc.
Instructions:
Preheat oven to 325°F. Line a muffin tin with liners or grease it.
In a large bowl, whisk together melted butter, honey, eggs, vanilla, and pumpkin puree.
In a separate bowl, whisk together flour, spices, baking powder, baking soda, and salt.
Combine dry ingredients with wet ingredients, mixing until just combined. Fold in mix-ins if using.
Spoon batter into muffin tin, filling each well ¾ full.
Bake for 25 minutes, or until a toothpick comes out clean.
Cool muffins in the tin for 5 minutes, then transfer to a wire rack to cool completely.
